Video will show the humanity in farm to institution work and how collaborations strengthen our impact. Storytelling will highlight one company using dough to create jobs for people with disabilities. Enjoy a culinary demo that shows how to make versatile products that are easy to incorporate into meal plans. Local, stone-milled flour in pizzas boosts institution nutrition plans and reconnects people to the food systems of their region---from seed to slice.

The New England and New York/Philly Metro Regions have joined forces to host an in-depth cultural and culinary event in Portland, Maine from April 28th through April 30th, 2023. Tristan Noyes, executive director of the Maine Grain Alliance will a session titled: Finding Inspiration in a Time of Grain Innovation - Beginning with the first Kneading Conference in 2007, the Maine Grain Alliance has provided opportunities to learn and share how best to grow and use grains to thousands of individuals across the world. The Maine Grain Alliance promotes beneficial uses of grain for good health, food independence, and purposeful jobs within viable communities. The organization connects people and supports the economic, environmental, and nutritional importance for establishing regional grain economies. This class will take you through how to utilize one of the world’s most ancient grains in various applications. Spelt was first cultivated by early civilizations, being traced as far back as 9000 years ago. Due to its difficulty in harvesting, spelt saw a decline in popularity, becoming almost nonexistent in the USA during the 1970s. The resurgence of popularity is mostly attributed to the grain’s high nutritional value, low glycemic index, and easy digestibility. Spelt brings a nutty and slightly sweet flavor to baked goods, and makes a wonderful gateway into experimenting with whole grain flours. During our time together, we will demonstrate how to make a 100% spelt pan loaf, a base cookie recipe that you will be able to adapt to your own preferences, and a spelt cracker recipe.
